I am finally proud to present to you the gourmet catering project I have been working on since last year and to invite you to live an experience with a unique taste!
A new restaurant in Palazzo di Varignana Bologna Italy
The Ginkgo Longevity Restaurant Bologna was born in the heart of Palazzo di Varignana, where I am the scientific director and accompany guests on wellness experiences. The restaurant is the result of a long study and experimentation work that I carried out with chef Marco Leandri, a true talent who promises “starry” results.
The search for good taste, the quality of raw materials, the attention to sustainability and the pleasure of beauty have given life to a restaurant with a unique concept: strategic cuisine at the service of well-being.

I have formulated a functional menu – inspired by my scientific approach – with a controlled glycemic impact, aimed at stimulating metabolic activity, counteracting oxidative stress and supporting the immune system..
This enhancing menu features strategic food combinations of nutraceutical ingredients capable of enhancing physical and mental performance, promoting beauty and well-being.
Sustainable choices with a high index of functional components are favored – enhanced by innovative cooking techniques – local products, edible flowers and excellent ingredients from our farm, including the award-winning EVO oil, the prince of the Mediterranean Diet.
The menu is anti-inflammatory, low-fodmap, free of gluten, dairy and refined carbohydrates. Absent garlic and onion to aid digestion. Depending on your choices, it also lends itself to a low-carb, ketogenic or vegan diet.
The interior design
For the Ginkgo spaces I was inspired by a wellness interior design concept: the design and atmosphere of the interiors made of natural elements, colors, relaxing textures, the harmony of sounds that evoke nature, recall biophilia: an immersive experience in nature.
Ginkgo Biloba is in fact the plant of longevity par excellence, present in the wonderful Garden of Villa Amagioia next to the restaurant, which can be visited and which is among the 100 most beautiful gardens in Italy in the circuit of Grandi Giardini Italiani. I chose the name Ginkgo precisely to describe an approach to health that combines the pleasure of the palate with the desire for well-being.

Thanks to the suggestive and relaxing atmosphere, it will be easier to become aware of the sensations given by the uniquely flavored dishes.

Some days you will meet me at the table with guests during the Mindful Lunch, a route available by reservation even for those who are not staying, which starts with a walk in Villa Amagioia.
