I am very proud to present you the gourmet dining project I have been working on since last year and to invite you to live a unique taste experience!
A new restaurant in Palazzo di Varignana Bologna Italy
The Ginkgo Longevity Restaurant Bologna was born in the heart of Palazzo di Varignana, where I am the scientific director and I accompany guests in wellness experiences. The restaurant is the result of a long effort of study and experimentation that I carried out with chef Marco Leandri, a true talent who promises “star” results.
The search for the finest taste, the quality of raw materials, the attention to sustainability and the pleasure of beauty have goven life to a restaurant with a unique concept: strategic cuisine at the service of well-being.

THE MENU
I have formulated a functional menu – inspired by my scientific approach – with a controlled glycemic impact, aimed at stimulating metabolic activity, counteracting oxidative stress and supporting the immune system..
This revitalizing menu features strategic food combinations of nutraceutical ingredients that can enhance physical and mental performance, promoting beauty and wellness.
Sustainable choices with a high index of functional components are favored – potentiated by innovative cooking techniques – local products, edible flowers and excellent ingredients from our farm, including the award-winning EVO oil, prince of the Mediterranean Diet.
The menu is anti-inflammatory, low-FODMAP, free of gluten, dairy and refined carbohydrates. Garlic and onion are absent to aid digestion. Depending on your choices, it is also suitable for a low-carb, ketogenic or vegan diet.
Interior design
For the spaces at Ginkgo, I was inspired by a wellness interior design concept: the design and atmosphere of the interiors made of natural elements, colors, relaxing textures, and the harmony of sounds that evoke nature, recall biophilia: an immersive experience in nature.
Ginkgo Biloba is in fact the plant of longevity par excellence, and it is present in the marvelous Villa Amagioia Garden next to the restaurant, which you can visit and which is among the 100 most beautiful gardens in Italy on the Grandi Giardini Italiani circuit. I chose the name Ginkgo precisely to convey an approach to health that combines the pleasure of the palate with the desire for well-being.

Thanks to the evocative and relaxing atmosphere, it will be easier to become aware of the sensations given by the uniquely flavored dishes.
To meet me at the restaurant or ask my advice about the menu, you can have me called and if possible I will gladly join you. Some days you will meet me at the table with guests during the Mindful Lunch, an experience available by reservation even for external guests, which starts with a walk at Villa Amagioia.
