Uova alla Jova: a protein-rich breakfast inspired by Jovanotti
After attending a Jovanotti concert, I shared this recipe with the energy of his music still in mind. I first discovered it when my lovely patient Loredana asked, while we were discussing her meal plan, whether we could include… Uova alla Jova!
I had never heard of them, so it was the perfect opportunity to discover and adapt this creative dish, turning it into a balanced breakfast in keeping with a functional approach to nutrition.
A dietitian’s note
Uova alla Jova make a light, satisfying, protein-rich breakfast with a low glycaemic impact. Eggs provide high-quality protein and essential micronutrients, while dark chocolate (at least 70%) is a natural source of antioxidants. A lovely way to start the day with energy and support concentration and appetite regulation.
Ingredients (1 serving)
- 2 fresh organic eggs
- 1 level tablespoon dark chocolate chips (at least 70%)
- 2 teaspoons erythritol (or another sweetener of your choice)
